California Common Beer Bottled

I bottled up the Cali Common last night.   I have been playing around with priming sugar quantities.

The blonde ale that I brewed was undercarbonated.  I think I just went with the 3/4 cup of corn sugar in a pint of water formula.  The carbonation was pretty disappointing.

This time I tried to calculate using the temperature of the beer at bottling to understand how much priming sugar I would need to get the beer to get the target carbonation I am looking for.

I used 6.5 ounces of corn sugar.  I boiled it for 15 minutes in a covered pot and cooled it to room temperature.  I added the mixture to my bottling bucket and bottled and capped as usual.

I’ll let you know how the carbonation is in 2 weeks.  It should be a little more bubbly than the blonde.

Dueling Oktoberfests

My latest brilliant homebrewing thought was to invite Mike down for a brew session and ask him to bring down his kettle and his burner.  Then we could brew two Oktoberfests at the same time.

I was planning to brew an Oktoberfest this month and let it lager all summer long in the fridge.  Then I would have it ready for fall and see if that long lagering (4+ months) really makes a difference in taste.

With Mike moved into a new house, he hasn’t had time to clean up his garage to get his brewing set up ready.

What he needs to do is get his hands on some ingredients and come on down to brew up an Oktoberfest side by side with this dude.

It’s looking like more of an April brew day for me…let’s see if we can get this going.

Dunkelweizen Recipe

Here’s the all grain dunkelweizen recipe that I came up with. It’s a little different from the Roggenbier recipe that I posted last week. I made that one sweeter, where this one is more “wheaty”.

Breakfast of champions.

Ingredients:

3 lbs. Munich Malt
6 lbs. Wheat Malt
0.75 lbs. Caramel Malt 120L
1 lbs. Honey Malt
1 lbs. Melanoidin Malt
0.5 oz. Hallertau Mittelfruh Pellets boiled 60 mins.
0.5 oz. Hallertau Mittelfruh Pellets boiled 15 mins.
Yeast: White Labs WLP300 Hefewizen Ale

Predictions:

Original Gravity: 1.052
Terminal Gravity: 1.012
Color: 17.05 °SRM
Bitterness: 13.0 IBUs
Alcohol (%volume): 5.2%

Some notes: Mash at 152°F. I read a lot online and elsewhere that a decoction mash would work well for this style. Go for it if you have the time. Check out this link to learn more: http://brewery.org/library/DecoctFAQ.html

Ferment at 62°F for two weeks. Bottle or keg as usual.

Racked The California Common

So I know we have talked about skipping the secondary on this blog.   For the most part, we follow our own advice.  For lagers, I tend to not follow that advice and I do rack to a secondary vessel to give the beer some time to condition.

This time around, it had another purpose. I needed some time between primary fermentation and bottling because I have to clean and sanitize some bottles.  This secondary phase will give me some time to do that while the beer is chilling out.

So I prepared a carboy and racked the California Common on Tuesday night.  I checked the gravity and was surprised to see that it was giving me a 1.008 reading.  I had expected a final gravity reading of 1.012, so the yeast really did their thing and then some.

The starting gravity was a little higher than expected, probably around 1.052.  I was shooting for a 1.050 but no harm there.

I put the carboy in the beer fridge and I have been slowly reducing the temperature over the last few days.  I think we are sitting at 45°F right now and we started at 60°F.  By the weekend, it will be down to 35°F and I will let it stay there for a week or so.

Roggenbier Recipe

This is a Roggenbier recipe for a traditional German Rye beer, which is basically a dunkelweizen with rye instead of wheat.

Ingredients:

1.5 lbs. Munich Malt
6 lbs. Rye Malt
2.5 lbs. Caramunich Malt
2.5 lbs. Melanoidin Malt
.5 ounce Hallertau pellets boiled 60 mins
.5 ounce Hallertau pellets boiled 15 mins

Yeast:White Labs WLP300 Hefewizen Ale

Predictions:

Original Gravity: 1.052
Final Gravity: 1.012
Color: 16.72 °SRM
Bitterness: 14 IBU
Alcohol (%volume): 5.2%

Mash at 154°F.  Ferment at 62°F.
