The hobby of homebrewing beer

Mosaic Hops

Another hop profile for you to get to know before you buy your next new hop variety.

Here is the Mosaic hops profile.

They are a trademarked variety from the Hop Breeding Company, LLC of Yakima, WA. Before they were branded they were known and maybe still known as HBC369.

The parentage of this hop is Simcoe (YCR 14) and a Nugget derived male.

These hops were made available after the 2012 harvest and are just getting some play in homebrewing and craft brewing circles.

These hops have a complex, fruity aroma and flavor. There seems to be a lot going on with them. One source claimed they were Citra on steroids.

Origin: USA

Aroma: Mango, citrus, lemon, pine. Stan Hieronymus states “notably, blueberry” in his book.

Alpha Acid: 11.5-13.5%

Typical Usage: Source claim this hop is a triple threat: Bittering, Flavor, and Aroma. It might be interesting to brew a single hop beer with these. I think I would use these as flavor/aroma addition along with some Magnum hops for the bittering.

Beer Styles: So far – IPA, APA, and American wheat ales

Awesome hop – loads of flavour and character

  2. We agree – thanks for the comment!

I am now enjoying a Founders Mosaic Promise, single hop ale, brewed with only (I think) Golden Promise malt as a platform for the mosaic hop. It’s not bad. There’s a pronounced piney bitterness up front. I do pick up on the blueberry several seconds after I take a drink. The beer is fairly dry. I think this hop can cover many bases depending on the recipe that surrounds it.

  4. Thanks Doug – I will have to look out for that beer and compare it to some of the SMaSH beers I have brewed with Mosiac.

These go well with Citra and Goledn Promise mats in Surly’s Todd The Axe Man. So good!

  6. Nice – that’s a good combo. Thanks Sean!

Been growing cascade, sterling, nugget and fuggles from rhizomes but couldn’t find citra rhizomes last year and now have fallen in love with mosaic and have had no luck finding rhizomes of that either… Seems there’s some kind of patent or something on those 2 but thought maybe someone knew how to get or at least ones who have that same floral/citra/skunky/dank taste… Getting into home brewing and looking for a founders all day IPA flavored beer but not as weak alcohol content as a session

  8. Hi Katie – yeah, I haven’t seen any of the new hop rhizomes available either. I have found some All Day IPA clones out there. Brew ON!
