		<description>I did one a few years ago.  I have a few bottles left.  Only problem is that I used champagne yeast to dry it out.  Tasted good early, 6 months to a year in the bottle, but, dried out too much with some hot alcohol flavors after year two.

So, the next one I do will not employ the champagne yeast.

Key ingredient here is patience with more patience :-)</description>
